Halloween would not be the same without its many sweet treats and delicious desserts. However, looking for the perfect dessert for a Halloween party or a unique sweet treat to give to trick-or-treaters can be daunting. This article provides a short list of unique Halloween-themed cupcakes which are all treats, no tricks!

 

Recipe One: Friendly Ghost Cupcakes

Ingredients:

Cupcakes:

  • 2 ½ cups of all-purpose flour
  • 2 cups of sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 1 cup of milk
  • ½ cup of vegetable oil
  • 1 tablespoon of vanilla extract
  • 2 eggs
  • 1 cup of water

Decorations:

  • 24 Halloween-themed cupcake liners
  • 2 cans of vanilla frosting
  • 2 ½ cups of M&Ms
  • 24 doughnut holes
  • 1 ½ cup of white fondant
  • Black sprinkles

 

Preparation Time: 15 minutes

Cook Time: 15 minutes

Additional Time: 15 minutes (to decorate)

Total Time: 45 minutes

Yields: 24 cupcakes

 

Directions:

Step One: Preheat the oven to 350 degrees Fahrenheit. Prepare a cupcake pan with cupcake liners.

Step Two: In a large bowl, mix flour, sugar, baking powder, and salt.

Step Three: Add milk, vegetable oil, vanilla extra, and eggs in a medium-sized bowl and mix.

Step Four: Combine the wet and dry ingredients and beat until they are well-combined.

Step Five: Add water to the batter, continuing to mix on a low setting until well-combined. The batter should appear to be very thin.

Step Six: Fill the cupcake liners about halfway with the batter. Bake for 15-17 minutes. When cooked, remove the cupcakes from the oven and allow to cool for two minutes.

Step Seven: Frost the cupcakes with the vanilla frosting, and then place the M&Ms until the entire surface is covered.

Step Eight: Using a little bit of frosting, attach one doughnut hole to the top of each cupcake.

Step Nine: Drape the fondant over the doughnut hole so that it appears to look like a floating ghost. Attach sprinkles for the eyes and enjoy!

 

 

Recipe Two: Pumpkin Spice Cupcakes

Ingredients:

Cupcakes:

  • 2 ¼ cups of all-purpose flour
  • 1 tablespoon of baking powder
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of ground nutmeg
  • ½ teaspoon of ground ginger
  • ½ teaspoon of ground cloves
  • ½ teaspoon of ground allspice
  • ½ teaspoon of baking soda
  • ½ teaspoon of salt
  • 1 cup of white sugar
  • ½ cup of softened butter
  • 1/3 cup of brown sugar
  • 2 large eggs
  • 1 cup of pumpkin puree
  • ¾ cup of milk

Icing:

  • 8 ounces of softened cream cheese
  • ¼ cup softened butter
  • 3 cups of confectioners’ sugar
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of ground cinnamon

 

Preparation Time: 25 minutes

Cook Time: 25 minutes

Additional Time: 50 minutes

Total Time: 1 hour, 40 minutes

Yields: 24 cupcakes

 

Directions:

Step One: Preheat the oven to 375 degrees Fahrenheit. Grease or line 24 cupcake cups.

Step Two: Sift flour, baking powder, and one teaspoon of cinnamon, nutmeg, ginger, cloves, allspice, salt, and baking soda in a large bowl.

Step Three: Beat sugar, ½ cup of butter, and brown sugar in a large bowl until light and fluffy. Add eggs one at a time, continuing to beat until well-mixed. Add milk, pumpkin puree, and flour mixture.

Step Four: Pour the batter into the cupcake liners until each liner is about ¾ full. Bake in the oven for about 25 minutes and let cool for 20 minutes.

Step Five: To make the frosting, beat the cream cheese and ¼ cup of butter together until smooth. Add in confectioners’ sugar until fully incorporated. Add vanilla extract and one teaspoon of ground cinnamon and continue to beat until fluffy. Once satisfied, ice the cooled cupcakes.

 

Recipe Three: Chocolate Cupcakes with Pumpkin Cheesecake Filling

  • 1/8 teaspoon of salt
  • ½ cup of semisweet chocolate chips

 

Preparation Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Yields: 12 cupcakes

 

Directions:

Step One: Preheat the oven to 350 degrees Fahrenheit and line a cupcake tin with paper liners.

Step Two: Mix cream cheese, 1/3 cup of sugar, egg, pumpkin, and salt in a bowl until no lumps remain. Stir in chocolate chips. This will be the filling.

Step Three: Combine flour, one cup of sugar, cocoa powder, baking soda, and ½ teaspoon of salt in a bowl. Add in water, oil, vinegar, and vanilla extract until the batter is thoroughly blended.

Step Four: Pour the batter into the cupcake tin until each liner is ½ full of batter and top with one tablespoon of the cream cheese mixture. Add a few chocolate chips on top.

Step Five: Bake for about 25 minutes and let cool.
