October has come, in every household there is the smell of spiced pumpkin candles burning and orange and brown decorations covering every surface. The only thing missing is a fabulous fall dessert to make the season taste even better. Here is an autumn inspired dessert that is sure to spice up your holiday!

Iced Pumpkin Cookies:

Ingredients Needed:

  • Flour
  • Baking Powder
  • Baking Soda
  • Ground Cinnamon
  • Ground Nutmeg
  • Salt
  • Melted Butter
  • Sugar
  • Pumpkin Puree
  • Eggs
  • Vanilla Extract
  • Confectioners’ Sugar
  • White sugar

Directions:

  1. Set oven to 350˚F. While the oven is heating, combine 2 ½ cups of flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, ½ teaspoon of ground nutmeg, ½ teaspoon of ground cinnamon, and a ½ teaspoon of salt. Set aside.
  2. In a separate bowl, beat together ½ cup of butter, 1 ½ cups of white sugar, 1 cup of canned pumpkin puree, 1 egg, and 1 teaspoon of vanilla extract. Once beaten together, mix in dry ingredients from step 1.
  3. Put one tablespoon dabs of cookie dough onto a sheet. Cook for 15- 20 minutes.
  4. While cookies are cooking, add 1 tablespoon of melted butter, 1 teaspoon of vanilla, 3 tablespoons of milk, and 2 cups of confectioners’ sugar. Still until you get a drizzling consistency (Add milk if needed). This will be the icing for the cookies.
  5. Once cookies are done, drizzle icing on cookies and ENJOY!
