If you like pumpkin pie, then you may like this other pumpkin treat.

Pumpkin Pie Shake

Time: 15 minutes or less

And here is what you will need.

2 cups vanilla reduced-fat ice cream (such as Healthy Choice), softened

Or regular vanilla ice cream

1 cup fat-free milk

Or regular milk

2/3 cup canned pumpkin

1/4 cup packed brown sugar

3/4 teaspoon pumpkin-pie spice

3 tablespoons frozen fat-free whipped topping, thawed

Another recipe I am dying to try are Apple Fritters!!!

Time: 35-40 minutes

Amount: 4-6 servings

Ingredients

  • 1 1/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 cup sparkling water
  • 1/2 cup buttermilk
  • 1 teaspoon pure vanilla extract
  • Zest of 1 large lemon
  • 2 cups olive oil
  • 2 cups vegetable oil
  • 3 firm apples, such as Granny Smith

Mix the flour, 1/4 cup sugar, cinnamon, salt, baking powder and baking soda together. Then, add sparkling water, buttermilk, and vanilla. Stir until it is batter, and then let it rest for 15 minutes.

In another smaller bowl whisk 1/2 cup of sugar with the lemon zest.

In a 5 quart sauce pan put the olive and vegetable oil on a medium heat of a stove. If you have a thermometer, wait until the oil heats up to 375 degrees F . If you do not have a thermometer, use a piece of bread, and it should take about 3 minutes to brown.

In the meantime peel and core the apples. Then, make slices 1/2 thick. Use a paper towel to remove excess wetness from the slices. When you are ready, coat the apple slices in the batter, and make sure to coat them completely. Add these slices carefully to the sauce pan full of oil and turn them occasionally until the slices are golden brown. Do these in batches. When the apples are done, dry them on a paper towel. Then, sprinkle them with the lemon sugar.
